Despite the profound impact on young lives and families, childhood cancer research receives alarmingly low funding – less than 4% of the National Cancer Institute’s budget is allocated to all pediatric cancers combined. This glaring disparity underscores the urgent need for greater awareness and financial support. Recognizing this critical need, I felt compelled to get involved and contribute to making a difference.

Our collaborative campaign, in partnership with Cookies for Kids’ Cancer, aimed to raise vital funds. We were incredibly proud to set an initial goal of $3,000, a goal enthusiastically supported by three generous companies: Dixie Crystals, Mediavine, and OXO. Each of these partners pledged to match the donations raised through this campaign, tripling our collective impact up to $3,000! Thanks to the incredible generosity of many of you, we successfully reached our initial fundraising target. However, the fight is far from over, and the need for support continues. These homemade double chocolate meringue cookies offer a delightful contrast: a light, airy exterior with a surprising, chewy semi-sweet chocolate chip center. They are an elegant and delicious choice for Valentine’s Day, special occasions, or whenever you crave a unique chocolate dessert.

  • Servings: Approximately 36 cookies

Ingredients

  • 3 large egg whites, at room temperature
  • ⅛ teaspoon cream of tartar
  • ⅛ teaspoon fine sea salt
  • 1 cup granulated sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1 cup semi-sweet chocolate chips (mini chips work well for a more even distribution)

Instructions

  1. Preheat your oven to a low temperature of 200°F (95°C). Line two large baking sheets with parchment paper or silicone baking mats.
