Craving the rich, savory taste of slow-cooked carnitas but don’t have all day? Our super easy Instant Pot recipe for Mexican-style pulled pork is your answer. By utilizing the magic of your Instant Pot or any electric pressure cooker, you can achieve wonderfully tender and juicy pork in under two hours. The secret lies in a carefully selected blend of seasonings and the power of pressure cooking, ensuring every bite is bursting with flavor.

Once the pork is perfectly cooked, the final step involves a quick crisping under the broiler, transforming the succulent pulled pork into golden, irresistibly crispy carnitas. Imagine indulging in the best pork tacos you’ve ever tasted, all from the comfort of your kitchen. This method not only saves time but also guarantees a depth of flavor and texture that will impress even the most discerning palates.

Traditionally, making carnitas involves hours of simmering pork in lard until it’s tender and then crisping it. While delicious, this method is time-consuming and often reserved for special occasions. The Instant Pot revolutionizes this process, offering a faster, simpler way to achieve similar results. The pressure cooker creates an intensely flavorful environment that quickly breaks down tough cuts of pork, locking in moisture and ensuring unparalleled tenderness. While purists might argue over what constitutes truly “authentic” carnitas, this recipe delivers on flavor, texture, and convenience, making it a fantastic option for weeknight meals or weekend feasts.

What are Carnitas? The Heart of Mexican Pulled Pork

Carnitas, meaning “little meats” in Spanish, is a beloved dish originating from the state of Michoacán, Mexico. It’s essentially pork that has been slow-cooked until incredibly tender, then often shredded and crisped. The traditional method involves cooking large pieces of pork, typically pork shoulder, in its own fat or lard, sometimes with additions like orange juice, herbs, and spices. The slow cooking renders the fat, tenderizes the meat, and infuses it with deep, savory flavors. The final step is crucial: crisping the meat until it develops those irresistible golden-brown edges and crunchy bits that make carnitas so unique and delightful. Our Instant Pot method captures the essence of this traditional dish, delivering all the tenderness and flavor, with a much quicker cooking time.

Choosing the Best Meat for Perfect Carnitas

When it comes to crafting exceptional carnitas, the choice of pork cut is paramount. Hands down, the best cut for this dish is **pork shoulder**, also widely known as pork butt. This cut is ideal because it has a good balance of meat, fat, and connective tissues, all of which contribute to the rich flavor and tender texture that define carnitas. During the pressure cooking process, the fat renders down, moistening the meat, while the connective tissues break down into gelatin, creating a succulent, fork-tender result.

You can opt for either a bone-in or boneless pork shoulder. Many prefer bone-in for the added flavor that the bone imparts to the cooking liquid, but boneless works just as well for convenience. Look for a roast that is well-marbled, as this intramuscular fat is key to keeping the carnitas moist and flavorful. A 6-pound pork shoulder is a common size that yields a generous batch, perfect for feeding a crowd or ensuring plenty of delicious leftovers.

Why the Instant Pot is Your Carnitas Game Changer

The Instant Pot has revolutionized home cooking, and making carnitas is no exception. While traditional methods can take many hours, the Instant Pot significantly cuts down cooking time without compromising on flavor or tenderness. Here’s why it’s a game-changer for this Mexican classic:

  • Speed: A pork shoulder that would take 8-10 hours in a slow cooker or several hours in a Dutch oven can be fork-tender in just 90 minutes under pressure.
  • Efficiency: The sealed environment of the pressure cooker locks in moisture and flavor, creating a self-basting effect that results in incredibly juicy meat every time.
  • Ease of Use: Simply set it and forget it. The Instant Pot handles the cooking with minimal supervision, freeing you up to prepare other components of your meal.
  • Flavor Infusion: Pressure cooking helps to deeply infuse the pork with the flavors of the spices, citrus, and liquids, leading to a more aromatic and rich final product.

Crafting Easy Pork Carnitas in Your Pressure Cooker

Making delicious carnitas in the Instant Pot is surprisingly straightforward. The key steps involve proper seasoning, adding aromatic ingredients, and the right cooking liquid to achieve that signature flavor and tenderness.

The Perfect Seasoning Blend

Just like any great pulled pork, Mexican carnitas starts with a robust seasoning. For this recipe, we build on a foundational spice rub and add those essential Mexican-inspired flavors. You’ll liberally season the pork shoulder all over with a mixture of:

  • Sea salt
  • Garlic powder
  • Ground cumin
  • Smoked paprika
  • Ground black pepper
  • Ancho chili powder (for a mild, earthy chili note)

If you don’t have individual spices on hand, a packet of your favorite taco seasoning can serve as a convenient substitute, offering a similar flavor profile. Don’t be shy with the rub; ensure every surface of the pork is well coated for maximum flavor penetration.

Preparing the Pork

For even cooking and easier handling in the Instant Pot, it’s best to cut your large pork shoulder roast into 2 or 3 substantial chunks. This allows the meat to fit comfortably in the pot and ensures that all pieces cook uniformly to perfect tenderness. Resist the urge to cut them too small, as larger chunks hold their moisture better during pressure cooking.

Adding Aromatics and Liquids

Once seasoned, place the pork chunks into your Instant Pot. Then, add a chopped onion and several whole garlic cloves. You can even tuck the garlic cloves directly into the meat for enhanced flavor. These aromatics will slowly infuse their essence into the pork as it cooks.

Next, squeeze the juice from one lime and one orange directly over the meat. The citrus juice is vital; its acidity helps tenderize the pork by breaking down fats and connective tissues, while also adding a bright, subtle freshness that cuts through the richness of the pork.

Finally, pour in a bottle of your favorite beer. While this might not be strictly traditional, the beer adds another layer of complex flavor. For the best results, consider a Mexican beer or one with citrus or fruit notes, such as a wheat beer or a peach lager. The subtle malty and fruity undertones will complement the pork beautifully.

Achieving Fork-Tender Perfection: Pressure Cooking Time

The cooking time in the Instant Pot is critical for achieving that desired fall-apart tenderness. For a 6-pound pork shoulder, we recommend pressure cooking for a full 90 minutes. Through extensive testing, this duration has proven to be the sweet spot. While you might be tempted to cook it for less time, it simply won’t yield the effortlessly shreddable texture that truly defines great carnitas. Trust the 90-minute mark; it’s the golden standard for perfectly tender, juicy pork.

The Essential Step: Making Crispy Shredded Pork

After the pressure cooking cycle, your pork will be incredibly tender and moist. However, to transform it into true carnitas, you need to achieve that characteristic crispy exterior. This final step is non-negotiable for authentic texture and flavor.

Once shredded, spread the pulled pork evenly onto a large baking sheet. Crucially, drizzle some of the flavorful cooking liquid from the Instant Pot over the meat. This liquid is packed with all the rendered fat and concentrated spices, which will help the pork crisp up beautifully and retain moisture during broiling. Place the baking sheet under a preheated broiler for about 5 to 10 minutes. Keep a close eye on it, as broilers can vary in intensity. You want the edges of the pork to turn golden brown and develop those delicious crispy bits without burning. If you prefer, you can also crisp the carnitas in a hot skillet with a bit of the reserved cooking fat, stirring frequently until browned and crispy.

With your perfectly crispy and tender carnitas ready, you’re all set to build incredible pork tacos, burritos, or simply enjoy the savory meat straight off the tray – it’s that good!

What to Serve with Your Delicious Carnitas

The versatility of Instant Pot carnitas makes them a fantastic centerpiece for a variety of Mexican-inspired meals. Here are some classic and creative serving suggestions:

  • Warm Tortillas: Corn or flour tortillas are essential for traditional carnitas tacos.
  • Fresh Salsa: Diced tomatoes, a vibrant pico de gallo, or your favorite salsa adds a burst of freshness.
  • Creamy Avocado: Slices of ripe avocado or a dollop of creamy guacamole provide a rich, smooth counterpoint.
  • Cooling Cream: A swirl of sour cream or Mexican crema balances the richness of the pork.
  • Spicy Kick: Thinly sliced jalapeño peppers (fresh or pickled) bring a welcome heat.
  • Cheese Please: Shredded Monterey Jack or crumbled cotija cheese adds a salty, tangy touch.
  • Herbal Freshness: A sprinkle of fresh chopped cilantro brightens all the flavors.
  • Rice and Beans: Serve alongside fluffy Mexican rice and black or pinto beans for a complete meal.
  • Salad Bowls: For a lighter option, use carnitas as the protein base for a vibrant salad bowl with your favorite greens and toppings.

And don’t forget the amazing potential for leftovers! Carnitas are incredibly versatile. They’re perfect for pulled pork nachos, quesadillas, burritos bowls, or even topping a baked potato. Their rich flavor only deepens over time.
